Grilled sea bream is an elegant seafood dish built around the natural flavor of the fish. Lemon, olive oil, salt, and oregano provide a bright, aromatic finish without masking its delicate taste.

Ingredients

- 2 whole fresh sea bream, about 350–500 g each
- 1 fresh lemon
- 3 tablespoons olive oil
- Kosher salt, as needed
- Dried oregano, as needed

Preparing the Fish

Clean and scale the sea bream if necessary, then pat it thoroughly dry with paper towels. Make 2–3 shallow diagonal cuts through the thickest part of each fish on both sides.
Brush the fish evenly with olive oil, working some into the cuts. Season with salt on both sides and lightly inside the cavities.

Grilling the Sea Bream

1. Preheat the grill or grill pan thoroughly.
2. Lightly oil the cooking surface if needed to reduce sticking.
3. Place the fish on the hot grill and cook for about 5–6 minutes on the first side.
4. Carefully turn the fish and cook for another 5–6 minutes.
5. Continue cooking until the thickest part reaches 145°F (63°C) when checked with a food thermometer.
6. Transfer the fish carefully to a serving plate.

Lemon and Olive Oil Dressing

Juice the lemon into a small bowl and whisk with 2 tablespoons of olive oil until well combined.
Drizzle the dressing over the grilled fish and finish with dried oregano. The lemon brings acidity and freshness, while the olive oil rounds out the flavor.

Dry the fish thoroughly. Removing surface moisture helps improve browning and reduces the chance of sticking.
